Wine-making
Hand harvested in 10 kg crates.
All the grapes are passed along the selection belt and are destemmed.
Maceration for a few hours with their skins is sufficient to extract the colour. Subsequently spontaneous fermentation takes place in a stainless steel tank.
Tasting
Balsamic and intense aroma. Aromatic Mediterranean plants and mint lead us, through a woody part, to a note of root that is reminiscent of liquorice.
Its attack in the mouth is light, gradually opening up to a highly citrus and tense acidity. Mid-palate it is full. The final flourish is a lingering, bitter root with a mineral earth aftertaste.
